This quick English Pea Soup is a wonderful, fresh, decadent choice for any occasion. It is so simple and quick to make, yet it looks and tastes like you spent hours perfecting it.
4 c. Chicken Broth (or less depending on consistency desired)
3 c. Frozen Peas
¼ c. Sour Cream
¼ c. Bacon Bits
Bring chicken broth to a boil in a medium sized pot. Add frozen peas and boil until cooked through.
Remove peas and place in a blender with 1-2 ladles of the stock. Blend peas until smooth adding broth a little at a time to reach desired consistency.
Strain pea blend through a small screen strainer for a smoother texture. Season to taste. Serve warm or chilled with a swirl of sour cream and bacon bits.
